Singhara atta- a healthy flour

Singhara atta comes from water chestnut which is the underground storage bulb, of the water chestnut plant. Water chestnuts are sold in India in 2 forms- the fresh green ones and the roasted black ones. Both are tasty and available only seasonally.
Water chestnuts are nutritionally rich and contain a good number of vitamins and minerals like potassium, manganese, vitamin B, iodine and manganese and antioxidants.
The kernel of water chestnut contains a high level of protein. There is about 1 percent fat. It is cholesterol free too. Water chestnut has been proven beneficial to diabetics. It is an ideal food choice for managing diabetes due to its low calorie and high fibre content. Singhara atta has a glycemic index of 60, which makes it a medium GI food. But due to its slow digestibility, it helps manage diabetes.
The high content of manganese and iodine make it an ideal food for the proper functioning of thyroid gland.
