Kidney Beans Sandwich Recipe

A lot of my clients ask me for snack options. They get bored with the same stuff and rightly so! A little innovation can make things interesting. I am sure many of you face the same issues. So today I am posting a healthy recipe which is very easy to make and delicious too. This recipe is high in protein and hence will keep you full for longer.
Kidney Beans Sandwich Recipe
Ingredients:
4 slices of whole wheat bread
1 cup onion, chopped
1 cup tomatoes, finely chopped
1 cup cucumber, finely sliced
1/4th cup red kidney beans, boiled and mashed
2 tsp tofu/paneer, chopped
2 tsp coriander leaves, chopped
1/4th tsp roasted cumin seeds powder
1 tsp lime juice
1 tsp flaxseeds, roasted and powdered
1/4th tsp chilli powder
1 tsp sesame seeds, roasted
1 tsp olive oil
1 tsp mint chutney/sauce
Salt to taste
Procedure:
Take mashed kidney beans in a large bowl. Mix all the ingredients with the mashed beans and mix well. Add olive oil, lemon juice, roasted flax seeds powder and salt. Mix well. Take a slice of bread and apply a layer of mint chutney/sauce. Spread the kidney beans stuffing over it evenly and cover it with another bread slice. Grill and enjoy this yummy sandwich 🙂
